Paleo-Friendly Pumpkin Pancakes
Treat yourself to tasty, gluten-free, paleo-friendly, pumpkin pancakes even Mr. Jack O’lantern likes! I love experimenting with gluten-free flours and almond flour is an excellent choice for pancakes. The nutty flavor combined with pumpkin and spice is delightful. These pancakes are also high in protein, which helps to keep blood sugar levels stable.
Recipe:
5 eggs
6 Tbs canned pumpkin
2 Tbs melted coconut oil plus extra for the pan
1 Tbs molasses
2 tsp pumpkin pie spice
pinch of salt
2 cups almond flour
Blend all ingredients together in order until well combined. I used the Vitamix. Next, heat pan with coconut oil and drop a 1/4 cup of batter into the pan. Spread the batter out for a thinner pancake. Enjoy this tasty not-so-tricky treat!
