Sweet Summer Corn Salad
There’s nothing better this time of year than fresh organic corn! I really enjoy eating corn raw, as it is sweet, with a little crunch, and full of flavor. Luckily, I have an abundance of cherry tomatoes growing in the garden, and the two make a perfect pair. This is a simple recipe, which includes fresh herbs that may be growing beside your tomatoes! I used basil and parsely, which are both tremedously cleansing herbs, but there are other herbs you may choose as well, such as cilantro, chives, scallions, or if you’re brave – raw garlic!
The Recipe:
2 cups of cherry tomatoes, cut in half
2 ears of organic corn (please no GMO corn)
1 avocado, diced
1 Tbs chopped red onion
1 Tbs chopped fresh basil
1 Tbs chopped fresh parsley
1 Tbs lime juice
2 Tbs apple cider vinegar
dash of sea salt
Cut the fresh kernels off the corn with a sharp knife. Then toss all ingredients in a bowl and enjoy this sweet summer sensation!
